How can I put aside my assumptions and understand my users?

It's interesting if you try to observe how many assumptions you make without any facts.

Sometimes, we can let these assumptions lead us to incorrect decisions when it comes to user experience. Here is some interesting content from the Interaction Design Foundation.
"...gain an empathic understanding of the problem you are trying to solve. This involves consulting experts to find out more about the area of concern through observing, engaging and empathizing with people to understand their experiences and motivations, as well as immersing yourself in the physical environment so you can gain a deeper personal understanding of the issues involved.
My interest is how the part about immersing yourself in an experience applies to users/designers during an experience like a pandemic, or just remote working once the pandemic is over.
